Yes, there is such a thing as green coffee beans.
No, they are not coated in matcha or wasabi, and no, they are not more environmentally friendly.
They’re just the raw, unroasted version of the coffee beans that most people know.
While talk of green coffee is abuzz on social media, it is not the typical (or even the most satisfying) way to get your daily dose of caffeine.
It’s like when you go to the restaurant and order the breadless, mayo-less, chicken-free version of a chicken mayo sarmie and instantly wish you had just stuck to what you know.
Sometimes the old classic is the best.
The same can be said about unroasted (green) versus roasted (brown) coffee beans.
The bottom line, according to the National Coffee Association via Tasting Table, is that roasting coffee beans unlocks the flavour that’s inside a green coffee bean:
The process of roasting causes chemical changes in the bean, and [coffee brand] Lincoln and York explain why we roast coffee beans by saying, “In short, coffee beans are roasted so that they become coffee as we know it.”
As coffee beans roast, they become darker in color, caramelizing the flavors of the bean… They also lose moisture and become more brittle, ready for grinding and brewing into a deep, flavorful pick-me-up.
Making your morning brew from green, unroasted coffee beans won’t even be vaguely similar to what you expect from a cup of coffee, with more grassy, vegetal flavours, as opposed to nutty, caramel-like flavours.
Green coffee has also been described as more herbal and milder in taste, per Martha Stewart, also noting that much like other raw produce, green coffee can contain nutrients that are lost in the roasting process.
On the flip side, and to put it bluntly, “you would most likely end up with a bitter, unpleasant-tasting beverage” if you used unroasted beans.
Do whatever helps you get out of bed in the morning, but green coffee beans are basically, in all honesty, unrealised potential.
