I have spent the best part of the winter in pyjamas, and I make no apologies for that.
Eventually, though, I will need to stop guzzling tea and rusks (buttermilk, thick and chunky – thanks for asking) and make the odd appearance in public, which means it’s probably time I went on a bit of a health kick.
Eating healthier is far easier than exercising diligently, and a tasty salad seems like a good place to start.
Daily Dish offers a number of health-conscious options across their Dinner Boxes this week, but we will start with the Summer Cashew Salad, which is from the Banting Box:
The recipe card that comes with each meal, along with all of the ingredients already perfectly portioned, offers a step-by-step guide to getting this one just right.
You will need – cashew nuts, cashew butter, apple cider vinegar, fresh chilli (optional – deseed & chop finely), courgettes (slice into ribbons), and rump steaks (season generously with salt & pepper), as well as a few goodies from your pantry.

You will need – red onion, butternut, lemon, sunflower seeds, tahini, parsley, garlic, beef mince, onion, skewers, baby spinach, dates, mint, and a few basic pantry items.

You will need – free-range chicken breasts, olive oil, lemon, courgettes, Swiss Chard, red onion, pecan nuts, parmesan cheese, fresh mint, and staples from the pantry.
