There are some things you just can’t undo. Drunken text messages, that time you gave into curiosity and watched ‘Two Girls One Cup’ (DON’T) and the bet you shook on about running a half-marathon this year.
Things you can undo…boiling an egg. What? OK, you can’t exactly undo the boiling part, but scientists have found a way to reverse the effects that the boiling process has on the proteins found in the egg white. Whoop dee doo right, why should we be arsed about it?
Because, good people, the finding could have far-reaching effects in two vitally important fields. This from Huffington Post:
This ability to reconstitute proteins could streamline the process of manufacturing proteins used, among other things, in the production of cheese and other foods and the development of cancer treatments, according to the researchers.
There you have it. Not only can the new finding help in the battle against cancer but it will aid the production of cheese. Take a bow, scientists, you have done well.
