Bill Gates has personally backed an initiative in the US to substitute egg in all foods with a synthesis of plant products. The company making the egg substitute is called Beyond Eggs. (Because they’re helping us move beyond eggs, see that?) Their product launched in a Californian branch of Whole Foods, but the company is hoping to ship it’s product worldwide.
They’re especially keen to get the fake eggs in to developing countries where they propose authorities add extra nutritional value to it as an anti-malnurishment tool.
The product is made from easy-to-grow plants that, when mixed together, replicate the taste, nutritional values and cooking properties of an egg. At least, in theory.

Eggs are functionally incredible, they do everything from hold oil and water in mayo to making the muffin rise and holding scrambled eggs together. I started to think what if we can find plants that can do this. We have about 12 plants pre-selected, including a pea already widely grown in Canada. There’s also a bean in South Asia that is incredible in scrambled eggs.
We can make really good mayonnaise, we’ve done taste tests against market leaders, and beaten them consistently. In the world of cookies, we’ve trialled our products with everyone from Bill Gates to Tony Blair, both of whom couldn’t taste the difference.
Because Bill Gates and Tony Blair are chefs now.
